5 Ways to Use Mustard Oil in Indian Curries
Mustard oil has a pronounced aroma and flavour. Use it in recipes where that mustard character is desired and follow the product label and recipe instructions.
1. Prepare the oil according to the recipe
Use the heating method and quantity required by the dish. Reduce the heat before adding spices so they do not burn.
2. Add suitable whole spices
Jeera, rai, methi, bay leaf, dry chilli and other spices can be selected according to the regional recipe.
3. Cook the onion, ginger and garlic base fully
Allow the aromatics to cook to the stage required by the recipe before adding tomatoes, powdered spices or other ingredients.
4. Use a recipe-appropriate marinade
For selected paneer, vegetable, fish or other recipes, mustard oil may be included in a marinade. Follow a suitable recipe and normal food-safety practices.
5. Keep the quantity balanced
Because mustard oil has a strong sensory profile, start with the recipe quantity rather than adding it without measurement.
